Quick and Healthy Stir Fry

This colorful vegetable stir fry is ready in under 20 minutes! Perfect for busy weeknights when you want something healthy and delicious.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 lb chicken breast or tofu, cubed
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 inch ginger, grated

For the Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. Mix all sauce ingredients in a small bowl. Set aside.
  2. Heat oil in a wok or large skillet over high heat.
  3. Add chicken/tofu and cook until browned, about 5 minutes. Remove and set aside.
  4. Add more oil if needed, then stir-fry vegetables for 3-4 minutes.
  5. Add garlic and ginger, cook for 30 seconds.
  6. Return protein to the wok.
  7. Pour sauce over everything and toss to coat.
  8. Cook for 1-2 minutes until sauce thickens.
  9. Serve over steamed rice or noodles.

Meal Prep Tip: This dish keeps well for up to 4 days in the refrigerator!
