Classic Chicken Soup for the Soul
Nothing beats a warm bowl of homemade chicken soup. This comforting recipe has been passed down through generations and is perfect for cold days or when you’re feeling under the weather.
Ingredients
- 1 whole chicken (about 4 lbs)
- 3 carrots, chopped
- 3 celery stalks, chopped
- 1 large onion, diced
- 4 cloves garlic, minced
- 8 cups water or chicken broth
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
- Egg noodles (optional)
Instructions
- Place chicken in a large pot and cover with water. Bring to a boil.
- Reduce heat and simmer for 1 hour until chicken is cooked through.
- Remove chicken and shred the meat, discarding bones and skin.
- Add carrots, celery, onion, and garlic to the broth.
- Simmer for 20 minutes until vegetables are tender.
- Return shredded chicken to the pot.
- Season with salt, pepper, and bay leaves.
- Add noodles if desired and cook until done.
- Garnish with fresh parsley and serve hot.
