Quick and Healthy Stir Fry
This colorful vegetable stir fry is ready in under 20 minutes! Perfect for busy weeknights when you want something healthy and delicious.
Ingredients
- 2 tablespoons vegetable oil
- 1 lb chicken breast or tofu, cubed
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 inch ginger, grated
For the Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons water
Instructions
- Mix all sauce ingredients in a small bowl. Set aside.
- Heat oil in a wok or large skillet over high heat.
- Add chicken/tofu and cook until browned, about 5 minutes. Remove and set aside.
- Add more oil if needed, then stir-fry vegetables for 3-4 minutes.
- Add garlic and ginger, cook for 30 seconds.
- Return protein to the wok.
- Pour sauce over everything and toss to coat.
- Cook for 1-2 minutes until sauce thickens.
- Serve over steamed rice or noodles.
