Classic Chicken Soup for the Soul

Nothing beats a warm bowl of homemade chicken soup. This comforting recipe has been passed down through generations and is perfect for cold days or when you’re feeling under the weather.

Ingredients

  • 1 whole chicken (about 4 lbs)
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 8 cups water or chicken broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Egg noodles (optional)

Instructions

  1. Place chicken in a large pot and cover with water. Bring to a boil.
  2. Reduce heat and simmer for 1 hour until chicken is cooked through.
  3. Remove chicken and shred the meat, discarding bones and skin.
  4. Add carrots, celery, onion, and garlic to the broth.
  5. Simmer for 20 minutes until vegetables are tender.
  6. Return shredded chicken to the pot.
  7. Season with salt, pepper, and bay leaves.
  8. Add noodles if desired and cook until done.
  9. Garnish with fresh parsley and serve hot.
